That cutting meat out of your diet could be so awesome!!! It's been about 3 weeks and my fazam has been meat free! Now not meat protein free, seeing as I have a ridiculous obsession with ice cream, cheese and butter - the supplements just don't quite do it for me. But cutting out the meat itself has been awesome! Cooking has been quite the adventure, but I have been introduced to so many new flavors and even scents! I use things like saffron and have started really digging into Indian cuisine - curry and byriani. Combinations of things I didn't think were possible: Roasted Butternut Squash and Cauliflower pasta, Sweet Potato and Acorn Squash soup, vegetable and rice curry and byriani, and Lentil soups! They are SO, SO tasty.
We have been considering making the ultimate switch - VEGAN, but it is really quite the commitment. Cutting meat out - that was easy and fun! but all meat protein. I don't know. I guess we will see.
A few tools that have made the transition fantastic - rice cooker and food processor. Calling it a rice cooker is completely underestimating it's potential. Rick so graciously purchased one just five days ago and I have already cooked oatmeal (best ever!), applesauce, byriani (2 times!), vegetable and rice curry (twice!), macaroni and cheese and just plain ole' brown rice and STEAMED veggies! Do yourself a favor - snag one! Websites have also been crucial for the change. Soren being just a wee 11 months old, although not so wee - since he spends the entire day running around the house rearranging furniture and trinkets - we have to be sure he gets the calories, protein and iron to fuel our lil' tornado. Lentils are key along with brown rice. And since we are veggie purchase per season, we are digging on our orange, red and yellow friends - winter squash, carrots, apples along with their neighboring greens, collards and spinach.
We are loving it - have a recipe we MUST try or some veggie advice, let us know!
